Run Evolution without gdb and attach gdb to it when it crashes and
get the traces.
If it fails to connect to the Exchange server, please file a bug against
connector component in gnome bugzilla, get the E2K_DEBUG=4 traces,
and attach it the bug.

I think empty search was blocked to fix some issue with loading
entire LDAP addressbook in e-name selector dialog.
You can still try to get the entire address book, by some hack, like
setting the advanced search filter "email contains @"

Which version of Evolution are you using?
In 2.4.x, there was a some issue with the gconf keys getting modified
when account editor is opened, which is fixed in 2.5.x.
If you save the gconf keys for calendar when it works and compare with
the keys when it stops working, we can confirm that.

I think exchange operations plugin is not loaded for you.
There was a issue of it not getting loaded automatically, when some
other plugin fails, and it was fixed in 2.6
Enable it from edit->plugins menu and try to create the account.
Enter user name and OWA url as you provide for OWA.

To get back your address book data,
Export the old account's configuration information form gconf, using the
command
gconftool-2 --dump /apps/evolution/addressbook > /tmp/gconf-book.xml

You can just select mails in the local folder and copy to
Inbox of Exchange account in Evolution. It should work.

By "Personal" do you mean the local contacts and calendar items
(Under On This Computer) ?
You can select all contacts in your personal address book and copy
them to your Exchange address book. Or export them as VCF file and
import it to Exchange contacts folder.
