First of all, autocompleting from GAL should not hang Evolution.
Hope you have filed a bug on that. If not, while it hangs, file a bug
attaching gdb traces for evolution-exchange and evolution and file a
bug.
And for selecting GAL only when you want it, don't select GAL for
autocompletion in account preferences dialog and to select contact from
GAL, while you compose a mail/meeting request, click on "To:" filed, 
which will launch a dialog, select GAL there and search for the contact.

This is to open contact editor for that entry, and it should not hang.

yes, if the entry is autocompleted, as of now cut and paste only copies
the name and not e-mail. This is also a known issue.

sure. Evolution itself doesn't do it.

About moved mail getting marked as new mail, I am not sure. I don't use
exchange connector. Some exchange connector developer can help you here.
