On the Mac there is no easy way to enlarge the menu or scrollbars. Icon
text can be increased minimally.
On the Mac, there seem to be two choices:
1. lower the resolution to magnify everything, or
2. use an on screen magnifier, and not be able to read menus without it.
Please do find out what settings she uses to en large the menu. It would
help. For a while anyway.

Speak auto corrections is turned on. I've tried CMD ; , CMD ;, VO;, VO: to no
change. It doesn't even acknowledge a misspelled word, other than underlining
it. VO shift M will highlight it, though nothing else. Arrow keys don't seem
to work well either in text fields. They only go one lette

I opened Safari.
I turned VoiceOver on.
After a dozen tries, I managed to get it onto the Bookmarks.
Somehow, as I was transferring my notes to a Pages document, it crashed,
and a low, low, grumbling male voice started speaking.
I turned off VoiceOver, closed Safari, and tried again.

I totally agree with you. The Mac just doesn't quite cut it where serious
productivity is concerned. Though in my case I'm quite happy to run two
computers as my windows 7 machine is all set up with what I need for my
medical transcription studies.
