LaTeX is crossplatform, so once you learn how it works on one operating system,
you'll be fine on any other.
The only way I've found to turn a word processed document into a LaTeX one is
to copy the file to a text editor i.e. TextEdit and then add the LaTex syntax

Matt means that if you double tap in a text field that has content in
it, you'll either hear "insertion point at start" or "insertion point
at end". Double tapping in the same field again toggles the insertion
point and VoiceOver message to the other setting -- if it's at "start"

Word does actually have an equation editor in it that can be used.
It may not be there by default, but you can add it into the install if need
be.
