Well, I know that vmware fusion does automate the process for you. I did my own xp vm. If you are running a version that does not yet have windows 7 support directly, you can set it up as a vista vm. In that case you will have to interact with one of the dialogs during the instalation using sited help, because part of the win7 install is not there in vista.
