Hello Joshua, I can't help with training resources, but the foreign sounding text in the templates in Pages is a kind of dog latin used to fill up the text areas. As soon as you start overtyping one of these areas, the strange text disappears to be replaced by your own. I haven't had much luck

Hello Missy, In Pages preferences, you can choose to have Pages always open with a specific template. To create your own template, you start with a blank document and set up all the elements you want, then go to the File menu and select Save as Template. You can even include place-holder text
