Indeed it seems that the problem is that I'm changing the FileSet.
I added the "Ignore FileSet Changes = no" to my fileset to force the
default behavior. so it should do a full backup.
But it is not working. Any idea on what else to check?

The short answer is you need more tapes because *you* told bacula to
keep volumes for 365 days.
If you only want to use one tape then you need to drop your Volume
Retention, File Retention and Job Retention values to something below
your job interval. If your jobs happen once a day

Well if 'list media' only showed the 1 volume that's all Bacula knows about.
The *unknown* means the Bacula director was unable to work

Thats a whole different problem I suspect, but could be related to
bacula not actually performing jobs at the moment and not having any
emails to send.

"Max Wait Delay" or "Max Wait Time" might be useful as well. (Cant

The above allow you to configure how long things will wait before
auto-cancelling.
