I have used the rubber doughnuts on a different bike (Indy Fab Planet
X), and find that they all migrate to the rear cable housing stop in a
matter of hours, where they do no good. I guess I could use a hundred
of them, though... :)

Chris King headsets are well worth the price. For options, take a
look at the Velo-Orange website, http://velo-orange.com/headsets.html.
With regards to the Gran Cru headset, I seem to recall reading that
headset is very nice, although a little tricky to install.

sidepull bikes (or V brakes) make it less likely that my handlebar bag is going
to interfere with my brake cables.
The exposed canti cable is often leaned on by a full handlebar bag and it can
be annoying. I believe
I have very occasionally found myself cycling in a suit--I was once
mistaken for a missionary while doing so. Most people in the U.S.
don't ride bicycles while wearing suits and dresses, but the
Copenhagenites have shown us the way on that.

decent one at a much more affordable price, I've seen the Ritchey Logic (1"
threaded) for about $20 online. The ultegra unit that came on the Ram is out
of production iirc, or I would recommend it as well.

Three speed. Then again, that's a bias. Since all my riding (such as
