Like all other flags, sent mail is just another flag. Gmail only has one folder, and that folder is called all mail. There is only one copy of each message on the gmail server, and that copy is in all mail. Gmail places appropriate flags on each message so your email client knows what to do with the message.
Note: even though there is only one active message in all mail, Google keeps multiple back-ups of everything and is always creating back-ups and storing the back-ups in other locations in case the server goes down. According to what I have read, the active mirroring is being done by at least three other servers at any given time.
