If you are running virtual machines you pretty need a modern machine unless you are very patient. As you are looking at small form factor, be aware that Intel Atom based solutions do not have the hardware support that makes VMs practical. While technically you could get something working with para-virtualization, you really do not want to do this.
You also cannot run OSX Lion in a VM legally unless your host OS is also Lion running on actual Apple hardware. There are some other licencing constraints with OSX. For small form factor, look at uATX, something like this perhaps: http://www.memoryexpress.com/Products/PID-BDL_A83850_F1A75M(ME).aspx For even smaller and lower powered you could try something like this: http://www.memoryexpress.com/Products/PID-MX32502(ME).aspx Dual head is provided by most, even the integrated graphics solutions. Triple head pretty much requires an ATI (and only models with Eyefinity in their description). The multiple keyboards, mice and monitors has been done. In fact there is a local company who does this very thing (Linux based even).
