I think this is similar in many countries: "Italian" food might be sufficient for Italian restaurants in Japan, but obviously isn't for Italian restaurants (and similar places that would be restaurants for OSM) in Italy, just as "japanese" (and maybe "sushi") seems sufficient for japanese restaurants in Italy, but in Japan you'd want to distinguish a lot of different subtypes. The best way is probably locals developping a tagging scheme for "their" field. The only problem then would be cuisine types that don't exist in the country of which they pretend to come from ;-) cheers, Martin
