I know that email can only be bounced at the server level, before
the server accepts it for delivery... but I know that some email
programs (like Mac OS X Mail) can 'fake' a bounce message that
looks authentic.

acknowledgements at all, since I'll deal with submitting the spam

Are there any other ways in which SpamAssassin can be used to make
sending spam less profitable to the people who do it?

reject/report all email to those old addresses, just in case I
might ever receive a legit email there. I just want spamassassin
to tag it as spam, so my mail client can route it into my spambox,
so I can later look at the subject lines and delete them.
