Cost. It might make good business sense for an outfit with 10 or 15 employees or similar to use (for example) hosted Microsoft Exchange Online for a monthly fee rather than the huge outlay involved in a server and expertise to run it in-house. Imagine if the internet bugs out at 3pm on a Friday when Madge is trying to get people paid before Christmas ... not good.
