I really doubt that anyone can be employed in Israel with a contract
"governed by the laws of the state of New York" - my guess (but I'm not
a lawyer) is that it is completely illegal (assuming, of course, that
you were actually in Israel, not New York, and the company had an Israeli
presence).

If such a trick was possible, you'd start seeing employers paying people
half the minimum wages, and saying it is ok because "the contract was
governed by the laws of the People's Republic of China" (or whatever...).
