If you look at:
https://lilypond.org/doc/v2.24/Documentation/music-glossary/pitch-names

 You'll see that the column closest to your request is the NL one.
If you use that you get bes b bis in the places where you want them
at the cost of not writing two s, i.e. bes instead of bess.
Is it worth it to create possible compatibility problem if you'd ever
wanted to share the music source ?

If so, define your own language file as various people have suggested.

An even worse solution would be to write a preprocessor to convert
your note names to "lilypond" note names.

Note, theese note names are only for note entry in lilypond file, you
can treat it as req. by lilypond (if you have to convince someone),
they will not be visible outside the lilypond source file except as a
result of possible combilation errors.
