As a boat owner, I would want somebody qualified to run the engine for a perspective buyer, to be sure it was done properly and re-winterized afterward. We made our purchase contingent on several things including a successful engine test and I saw how easy it is to make up a hose to do it right, with water flowing, and check the pumps, hoses, thermostat, transmission, etc. The seller agreed to let us run the tests using is boatyard's engine guy, we got a price, and he connected everything, got it started and we ran the engine up to temperature and checked everything, found a few minor issues, but got confidence we could get her home OK. We didn't do a compression test or pull any injectors, just checked operation, RPMs, temperature, charging, cooling water spit out the exhaust, smoke color, checked for vibration, etc. We discovered a bad fuel gage and two bad batteries, which played to my advantage. You will probably need a detailed survey and may want all systems checked, which could get involved, and may want to have a rigger check the whole rig? I would reccommend you get a copy of Don Casey's book that is a great guide called, Surveying an Old Boat. 1997. You can find it on Amazon.com or maybe at your library.
