Excellent news, and the usual speed of reply; thank-you! ... yes, I was misled 
by the convenient pull-down and didn't even consider the option of typing in 
the attribute name. I've made the appropriate changes, and now my .dita file is 
helpfully highlighting both new and deleted content

To complete the question, I've attached three screenshots:
profiles.png shows my profiles set-up
topic.png shows that when I'm editing the topic in XMLmind the profile is 
correctly highlighting <status="new"> and <status="deleted">
output.png shows that I haven't managed to apply the same highlighting to the 
.pdf output

What am I missing? probably something obvious ...

I'm assuming this means "a profile with definitions for all values of the 
attribute 'status' used in the topics/book to be processed"
