I use sendmail+mimedefang+spamassassin for my spam rejections.
Someone else on the list will tell you how to do it using postfix.
Need to use the beta version of postfix.
I also reccomend rejecting at a higher level, and tagging at a lower level.

I started rejecting at 15 and working my way down to rejecting at 9.5.
I tag mail as spammy at 5.0.

SO when you finally start rejecting spam, start rejecting at a high
threshold and then slowly work your way down to a threshold that does not
give you too many complaints.

You will get complaints, I just try and set my scores so I get only 1
complaint in every 20K-30K messages per false positive on smtp rejection.
