I just did the Grizzly Peak Century on my Hillborne (roughly 8550 ft.
of climbing). Mine is a 60 cm frame, and I enjoy the ride the
Hillborne and that size frame give. There is a steep climb in Walnut
Creek/Alamo called Castle Crest Road you could try.

Rockhopper and rode rocky trails around Sedona Arizona.
My impression so far - bent arms and legs with butt over the rear tire when
needed can get me most anywhere. Where that's not possible, I walk my horse
or tote if needed.

I am still not sure the Bullmoose are best for me though; maybe with

Cork grips with bar end shifters on the Hillborne and cork with
thumbies on the new (to me) Atlantis. The bar end grips have the
groove for the shifter cable and twine wrap holding the cable to the
grips. The twine is the only thing I shellac - the cork cleans easily.
