I know RT has this ability as do many other tickieting systems -- OSticket 
comes to mind as well.

I don't know if this question can me asked on this mailing list; if not, can 
someone gently direct me?
I got a running mail system based on postfix and dovecot for more than 5 years 
now and would like to implement a ticket system so that incoming mails are 
attributed a ticket number for the help desk support to be use.
