I'm fairly confident the model you ordered will have the LFP battery so it can be charged to 100% with no concerns. Tesla recommends plugging in daily so you won't hurt anything.
I'm in Minnesota and I've left my car outside in temps as low as -40 F and hopped in to drive and it worked no problem. Heat starts in less than 20-30 seconds usually and the car drives. Obviously things are stiff and cold at those temps, regen braking is non-existent, and the full acceleration isn't available due to the cold but it's driveable. The more you drive, the more the battery warms up and you will start seeing regen and performance improve. It should be a welcome improvement over the Leaf in all aspects except it's a bigger car so you won't get away with super tight parking spots anymore :) The Tesla app on your phone is awesome and they make improvements to it every few months. The car itself also receives OTA updates via WiFi every 3-4 weeks on average. Make sure to connect your car to your home WiFi or work so it can download in the background. You get to choose when to install the update and can start it in the car or via the app. I'm excited for you to get it!
