The time to go back to iOS 16 has long passed, this is only possible for a 
short while after a major new version of iOS comes out, but Apple stops signing 
the older versions usually after a few weeks. Having said this, which iPhone do 
you have and what exactly are you not happy about with iOS 17? iOS 17.2 is 
probably being released in the next couple of weeks and it takes care of a few 
more issues and with the exception with the double tap sometimes registering as 
a single tap, I have very few other problems at this stage.

Following the release of iOS 17.0.3 earlier today, Apple has stopped signing 
iOS 16.6.1,
iOS 17, and iOS 17.0.1, preventing iPhone users from downgrading to any of 
those software versions. Apple continues to sign iOS 17.0.2 for now.
Notably, this means that it is no longer possible to downgrade an iPhone from 
iOS 17 to iOS 16. It is not possible to downgrade to iOS 16.7.
Apple routinely stops signing older iOS releases over time in order to prevent 
users from downgrading to previous software versions.
iOS 17.1 is expected to be released later this month.
