Most bakeries in my area are selling just one type or two and actually they 
sell fresh breads they baked just moments ago and not a shop only selling 
various breads (maybe they are more craft=bakery). So I should choose the 
correct bakery before going to it.
While I was recording wholemeal bakeries I also saw some bakery complexes that 
are larger and bake a wider range of breads with different flours, etc. and 
have two distinct parts one for baking out of customers' eye and a shop. For 
these shops I agree, and we have more choices. But also there is another 
aspect: a bakery complex may only sell fancy breads while the common breads we 
use daily are flat breads (including lavash, sangak, taftoon, barbari...) and 
having only a shop=bakery isn't enough.

I agree, but as I wrote about my motivation, the wholemeal bakeries are not 
common and although there are some bakeries in each area but only some of them 
have become actually wholemeal. 
I say "actually" because for example Sangak bread is known to be wholemeal but 
it has become more bran bread than wholemeal in some areas.
So you can see my work like advertising for wholemeal bakeries that are 
increasing gradually :)
