As already mentioned you have to use a markup command. The following markup
should match the look of the \tempo command:

I hope I understand your question correctly. You could either use
chords in one voice and skips in the other, or you could explicitly set
\voiceOne or \voiceTwo or \oneVoice in both voices.

Ah, the learning Manual, section 3 would probably be a good place to
start for these things. It explains why one uses \new Voice or
\voiceOne, exactly what \voiceOne does, and the different ways of
aligning lyrics to notes using \lyricsto.

each part can be printed separately (for recorders) and to recombine the
parts back into a continuo part.

I was wondering why a \score inside \markup doesn't allow breaks. If I
insert a \break everything after it is ignored. If I want to have a
multi-line piece inside a \markup I have to put multiple \scores in a
column. Is there another way?
