I am 6'1", 230 lbs...big and heavy, ride lots of mixed terrain, and naturally gravitate to fat tires. The more I rode my Big Apple 2.35s (65mm) on paved road, however the more I began realizing their limitations for road. They're just a little too cumbersome. Unwilling to give up the blissful cushiness of these tires, I've switched to the Big Apple 2.0s (50mm), which I absolutely love. While they don't necessarily have quite the same grin-factor as the BIG fatties, they still provide a nice amount the cush, they fit much better under fenders, and I definitely feel the difference on the road.
But I also agree it depends on what one expects from a tire. On my Nishiki Prestige (road bike) I run super skinny tires, because every now and then I still want to fly over smooth roads... No compromising speed and smoothness there.
