Why do you assume that everyone around him tried to convince him to use carbon? Or that it was a matter of not trusting a carbon fork? Plenty of carbon forks survived the cobbles just fine. I suspect he wanted to use a fatter tire than would fit in any of the carbon forks that the team had handy, so they used what was available to do the job.
