I miss my poor Quickbeam, but while I had it, it served as the do all
beater. I used 50mm Berthoud fenders with mudflap on the front. The
extra length of the front fender plus flap did wonders to keep feet
dry and the bike relatively "clean." The durability of the metal was
a big PLUS too. I've used plastic fenders on other bikes, but have
tired of their flexibility and fragility.
Here's one of the last photos that I think I bothered to take:

Appropriate for this time of year. Though, this year I'm riding my
Atlantis and missing the Quickbeam more than ever.

I have a 52cm QB that I would like to replace the current single stay
SKS fenders that don't really work with the rear wheel sliding back
and forth. I could actually go on and on about their limitations...
So with the idea that the fender must be adjusted somewhat frequently
to deal with the wheel adjustments, would the two stay SKS like Riv
sells be the best choice? I am assuming that metal fenders would just
suck at this.
