I can guess it all right. And that's a common hassle with bounced messages.
The list server will only use the main envelope sender afaik.

Have postfix masquerade as <whatever-you-want> rather than setting the envelope
sender (or use esc-e - resend message - and edit the envelope sender as you
please, or forward the mail as an attachment instead of bouncing things around)
