This is a real problem when we're talking about new features.  You
could disable them by default and see what happens, but users then
might not learn about the new features.

*Some* new features could be annoying if on by default... because they
are extremely annoying anyways.  Continuous spellcheck would be such a
feature if it did autocorrect.  But if all it does is highlight errors
then it's OK.  Autocorrect features are all insanely annoying to *me*,
but typically it's obvious how to turn it off (because a tooltip or
dialog comes up the first time it happens, say, telling you how to
disable it), so I don't mind autocorrect features being on by default.
 Others might say that any feature that can be extremely annoying to
anyone should never be on by default, but that's a low bar: every
feature would have to be off by default then...
