You don't need to change the font-name or add the t1enc package unless you want to be able to search for the lyrics in Acrobat or copy/paste them from Acrobat to some other file.
Also, with most text editors (i.e. with editors that can output latin1 coded text), you can just write the letters as usual:

I have answered similar question on the mailing list several times and also pointed out the inability to add options to a specific package. I think Jan had some extra problems, since he probably used the latest development version, where the default font handling has changed. Actually, ecrm12 (I assume the ecrb12 was a misprint) is not part of any default TeX installation. Jan's proposed solution has another problem, namely that the space after the \aa is interpreted as "end of syllable" instead of as a space to be copied into the generated TeX code. I used underscore instead (which is translated to space in the generated code). Another possibility is to include the syllable in double quotes: "g\aa r" Then you can also say "g\aa{}r" which is equivalent, but maybe is more logical viewed as TeX code.

I'm amazed how much time it took me to figure this out, we should have some good examples on this. The v2.2.0 lilypond script is not very flexible or elegant with respect to setting special latex options.
I'm fairly sure that with some good bug reports (with latex code solutions) this could have been fixed eons ago.
