Here in Oz I'm using hoop pine - an Australian native timber that's popular with boatbuilders. It's been used in aircraft since at least WW2. About 10% heavier than spruce but also 15% stronger. And about an order of magnitude cheaper since it's locally grown whereas spruce has to be imported. I'm also using hoop pine marine ply instead of birch or mahogany.
The higher strength of hoop pine might offer opportunities to use smaller sizes in the timber, but I'm not doing that. The weight penalty across the whole airframe is about 15 - 20 lbs, but since I'm planning a mtow that's nearly 50% higher than the original design (1320 lbs vs 900 lbs), I figure the extra strength in the timber might provide a margin in structural strength I wouldn't otherwise have.
