You certainly have some good routers on there!
For the CCIE Lab the 3745,3640 and 3660 are great for any use, like running the 12.3T and 12.2T images. The 7200's are perfect for running the 12.2S image. You will have some difficulty in building our topology and doing our labs on just 2 of them, but it will get you very far!

The 8500 is a very nice ATM switch, so you could use that instead of the LS-1010. I'm not 100% aware of all the features it has and if it actually supports routing protocols and IP stuff.

You could practice a lot of the Service Provider techniques with this set-up, though I would recommend to get some racktime at proctorlabs.com especially on the ATM rack to practice our Volume 2 labs.
