There are numerous YouTube videos of people eating “century eggs” aka thousand year old eggs. Which are apparently neither 100 nor 1000 years old. But they look hideous.

"Palatable" is another thing. based on what I read, the taste qualities do decline, and the "best by" or "use by" dates are a subjective indication of how what's inside will taste.
