It's basically "merge rules" - when multiple people edit the same document, how do you merge those changes - with the objective of producing a consistent final document, i.e. so all collaborators eventually see the same thing.

Using OT allows me to see my changes to a document immediately, despite someone else editing the same document at the same time (with unknown wire latency), because the algorithm ensures the merge will happen in a consistent way when all ends eventually catch up.
