Thanks Richard but is there a different gesture we can use for answering the phone and not using earphones?

Earphones can still answer by tapping the button too.
Certain earphones, I suspect by Apple, and maybe others you can tell Siri to answer.

I can fined the 'answer a call' button on the phone but I reckon a gesture whereby I can double tap on the screen would be preferable/quicker.
