And how do you think some of the indigenous peoples all over the world smoked and cured/dried their meat and fish, on racks and probably more or less like that although I am sure they figured out very quickly that having it completely out in the open probably doesn't work so well because then you have wind blowing the smoke away and you probably won't get the same consistent results as you would in a smoke house or an enclosure where you can have the smoke but not the hot temperatures. The other thing is that if you have it out in the open you may end up with a few addatives, but then again I hear maggots and such are very nutricious so together with your salmon you might just invent the next super food. For cold smoking the salmon first has to get a rub of pickling salt with other stuff and here people probably have different opinions as to what is good. But use too much and it gets salty, use too little and it doesn't cure all the way through. I have had smoked Sockeye Salmon from a German guy who lives a couple of hours away closer to the coast and nothing I have had before or since comes close. After he puts on the rub he puts the filets in a walk-in cooler and lets them dry for 2 or so days, he says the key here is to do this very slowly because if the fish develops a skin too much moisture is trapped inside. After that he cold smokes at these low temperatures for another 1.5 to 2 days where it gets smoke three times for about 8 hours with time in between. He has given me some tips and advice, but he won't give out the exact seasoning mix he prepares beyond saying he typically uses about 3 Kg brown sugar to 10 Kg pickling salt and that he uses some black pepper and other spices.
