Do I need or want "special" rules to help with these spams slipping through?
(POPCORN, BACKHAIR, WEEDS, WEEDS2, etc.)
If so, how do I use them (meaning specifically where do they need to be
placed so SA can use them)?
Some of the rules at the rulesemporium are very good at fighting the "latest spam", some are not so good and prone to false positives. Heck, a few of them even have syntax errors and don't work :)
Personally, I'd suggest "auditioning" some of the rules by adding them but forcing the scores low (0.01) and see how they perform for you.. If they work well, start bringing up the scores a bit at a time.
After a while of playing with alternative rules you'll have a better feel for how well a rule will perform and be able to assign less conservative starting scores..
You can add rules to SA by creating any .cf file in /usr/share/spamassassin/
So you might create /usr/share/spamassassin/popcorn.cf and try out some of the popcorn rules, etc..
Be sure to run spamassassin --lint to check for syntax errors whenever you add rules.
