OK, probably not such a smart question on that last one. I got the answer on a quick google search. Now I will look for a way to configure maildrop to do the job.

SA only tags spam, it is the role of your LDA to do something with such email, put it in a separate folder, quarantine it, delete it, whatever you want. Tho I find it a good solution, for one month or so, to just deliver it normally and see what is tagged and what is not, it allos you to get a better perception of what is going on, and take a better deicsion on what you'll do with messages tagged as spam.
