Except for the case of anchovies, I don't think vegetable or dairy based fats are a good preservative. In fact, such facts probably go rancid much sooner. I digress. Removing the fatty goop does make it less unhealthy. In my experience the best lunch at or near work is usually had at a dingy "mess"-type place. Restaurants generally tend to add much too much salt and fat to make their food taste good. Whole wheat/multi grain in India? Leavened or unleavened?
