I had a similar problem fitting a Nitto large rear rack over a 50mm tire
with fenders on my Bombadil. To gain the extra space, I made some little
extenders out of steel from a toeclip. The rack clears the fender now, but
I suspect that I've compromised my load carrying capacity.

Yes, I still have the Choco Moose bars. I greased them and put them on my
Cheviot but after sitting on the bike in my basement ended up sticking with
the Bosco Moose bars instead. I didn't even put levers or grips on the
Chocos. I would definitely say they're in great shape.

I would like to add a rear rack eventually, but for now, the old Hobo bag
is working fine.

for the drive train and wheels on my Rivendell custom and am most
satisfied with the results.

sort of salt issues related perhaps to sea air. Of course, North
Dakota is about as inland as it gets. Should someone with a clear coat
finish anticipate a paint job to preserve the frame?

There's one toward the end that shows one side of the rear brake with the
stripped hardware.
