You could try editing the file spkg/install: delete (or comment out)
the lines

  rm -rf "$SAGE_ROOT"/devel/sage-main/doc/output/doctrees
  rm -rf "$SAGE_ROOT"/devel/sage-main/doc/en/reference/sage/*
