Two things:
1) In my experience it takes at least four coats of shellac for it to end up 
glossy. If you like the matte look, my advice is to just lay thin coats and 
stop at three. Anyone else want to confirm that number?
2) The trick to preventing the tape from twisting and adhering to itself is to 
remove the backing only a little at a time. It takes a little practice to get 
your technique down but then it's not too bad.
