The Park Tool tire jack works better for me than the VAR. But sometimes Specialized Pry Babies work well enough without pinching. And finally, I have found that I can mount even surprisingly tight tires (tho' not the very tightest) using the heel of my hand and my thumbs, the secret being to move forward along the bead in micro-fractions of mm (so to speak): IOW, very tiny bits at a time.
Oh, and do you inflate the tube very slightly (I use my lungs) before inserting into the casing? That does help against pinch flats.
