Ryan, FWIW, I've had a hard time getting the bars 'right' for me on my Cheviot. *I* never could get comfortable with the Choco Norm bar. I stumbled on this http://zedmartinez.com/2016/06/rivendell-clem-smith-jr/ Perhaps it will help. I got Bosco bars and am setting them up as in the article. Good luck.
