oops, not thinking straight again, it's the other way, but I know I like asymmetric BB better for the way everything sets up.
I was able to use a 2mm narrower BB than Jan recommended on my Viner with basically the same drivetrain you're setting up. I used Ultegra CX70 FD, and I got great chainline.
