OK, not really "component level upgrades" at all, except for the tires.
Instead, perfectly legitimate ways of suiting a bike to you and your
needs, in my opinion. Just be aware, Shimano STI left hand levers don't
always play nice with triples:

have had better luck with Campagnolo Ergo (and there's a way to use Ergo
levers with Shimano cassettes and derailleurs

Steve,
As for components different than the Sam kit, here are some based on
my current plan after all of this discussion:
3x10 gearing
brifters (TBD, maybe older Ultegra 6700? or SRAM?)
Rando bar (probably Compass 420mm)
Barlow Pass EL tires
SP dyno wheel
Of course, there are also the extras on top of the kit such as:
C17 Cambium seat
Honjo hammered fenders
Rack (TBD)
Light (TBD)
Bag (TBD)
and more
Cheers.

Patrick,
I was just going by comments made during the single early
research conversation I had with Dave, which I could have very
easily misunderstood. When I asked him about recommendations
for the AHH build, it was the same component set as used for
the drop bar Sam.
http://www.rivbike.com/product-p/build-05.htm
That isn't quite what I was looking for. I was looking for a
bit more upscaled build kit, which doesn't really fit with
that more value oriented kit. That is what led to the
component selection questions in this thread.
I will revisit it and request a higher level component list,
even if the parts are priced separately instead of as a
combined kit.
Which components in particular did you feel might better be
replaced with higher level versions? Just curious...
