Handlebar setup swaps certainly can run into a lot of re-cabling. I've 
thought about splitters before, but I'd rather just swap in a whole setup 
that already has cables/housing ready to go, then reattach cables. 
Not that you asked, but if I had those bikes I'd do the following:
Hunq: Choco-moose
Sam: Drops 
Trek: Ahearne bars

I agree that bullmoose bars look nice, but the vintage ones really just 
were a variation of a flat bar. The newer Nitto version that Riv sells 
angles back quite a bit more.
Also, keep in mind that drops come in all sorts of flavors. For some 
reason, even though I've tried them several times, I just don't feel comfy 
on Noodles. Wider definitely felt better, but my favorite drops right now 
are Nitto B132 rando bars.
