I love my MAFACs, personally, they are great brakes, but the Dia Compe/
Weinmanns work just as well.  The finish on the Dia Compes is superior
in many cases, IMHO.  They are also around in massive piles at used
bike shops (around here anyway).  Braking is very good, in my opinion,
with lots of modulation.  Modern pads really have made a huge
difference.

Aero style/modern brake levers will also get you more leverage and
that is noticeable when running center pulls.  Personally I would not
shy away from center pulls.

For the record, if the 750s are too long, you ought to be able to find
shorter ones.  I know there are lots to be found around here.
