The ps/grep gives me
 1644 ?        S      0:00 supervise qmail-smtpd
25761 pts/3    R      0:00 grep smtp
That doesn't help me or you :-(

The db eats memory 'cos it's Oracle. That's fine - it's supposed to. But
the mail volume on the whole isn't great - I think the box should cope.
The SMTP process concurrency angle is my favourite culprit at the
moment. If only I can work out where to put the limit...

How many concurrent SMTP connections do you have?

ps ax |grep smtp

I would also unload X.   I'm not sure why the database would eat up all
the memory.  I have 2 machines, neither has more than 640MB, both run
Mysql (master/slave), and I have plenty of memory. 

Unless you're using your mail server for something other than mail?
