Box has 512mb but most of that is taken up with a database instance
which also uses most of the processor. I have noticed that the kernel
bar on the memory graph (KDE desktop) is pretty damn near the
top...clue?

I've had that happen when I didn't have enough memory on FreeBSD.  The
machine eventually runs out of swap and is unresponsive.

You can reduce you total number of SMTP connections and/or increase RAM.

Does the console say anything when it 'freezes'?
